Introduction: For those of you that love Alfredo sauce, you don’t need to give it up just because you have a dairy sensitivity. There is a way to make pretty much whatever you want and used to like, you just have to adjust and make it in a new way. I walked down the health food aisle and found this little treasure and at $1.29 I had to try it.
How I made it: I used brown rice penne pasta that I got from “Trader Joes” and added a veggie chicken substitute. I made the packet according to the directions on the package. For the half cup of water, I used a watered down coconut milk to make it creamier. I also felt the sauce needed more liquid than the package suggested. Just add liquid as you stir until it reaches your desired consistency.
My thoughts: This was amazing. If you can’t make a vegan Alfredo from scratch yet, this is your answer. I was pleasantly surprised at how good this turned out and tasted. The package claims it takes three minutes to make and this is true. At first it was lumpy but it smoothed out when I kept stirring and added more liquid.
